No-Bake Cookies

No-Bake Cookies are the perfect easy treat. Just like the name suggests, this recipe does not require any baking. A great way to make dessert in the summer heat. Plus, it’s so quick and easy to make.

Ingredients:

  • 2 cups granulated sugar
  • 1/2 cup (or 1 stick) unsalted butter or margarine
  • 1/2 cup milk
  • 1 cup creamy peanut butter
  • 3 cups quick oats
  • 1/4 cup cocoa powder
  • 1 tbs vanilla extract
  • A pinch of salt

Instructions:

  1. Gather all your ingredients and measure them out.  Line a baking sheet with wax or parchment paper. Having everything ready to go will make the process smoother.
  2. In a medium-sized saucepan, combine the granulated sugar, unsalted butter, cocoa powder, and milk. Cook over medium heat, stirring frequently until the mixture comes to a rolling boil. Once it reaches a boil, let it cook for 1 minute. This step is important for the texture of the cookies. If you do not boil long enough the cookies will be very thin.
  3. Remove the saucepan from heat and add the peanut butter,  vanilla extract, and salt. Stir until the peanut butter is completely melted and mixed into the chocolatey mixture.
  4. Add the quick oats to the mixture and stir until everything is well combined. The oats should be fully coated with the chocolate mixture.
  5. Drop spoonfuls of the mixture onto your prepared baking sheet. You can use a cookie scoop or two spoons to help shape the cookies.
  6. Allow the cookies to cool and set at room temperature for about 30 minutes. They’ll firm up as they cool, making them easier to handle.
  7. Once the cookies have set, they’re ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to 3 days.

Tips and Variations:

  • Add-ins: Mix in extras like chopped nuts, shredded coconut, or mini chocolate chips for added texture and flavor.
  • Nut-Free Option: If you have a nut allergy or prefer not to use peanut butter, you can substitute with almond butter or sunflower seed butter.
  • Lower Sugar: For a slightly healthier version, you can reduce the sugar amount or use a sugar substitute.
