No-Bake Cookies
No-Bake Cookies are the perfect easy treat. Just like the name suggests, this recipe does not require any baking. A great way to make dessert in the summer heat. Plus, it’s so quick and easy to make.
Ingredients:
- 2 cups granulated sugar
- 1/2 cup (or 1 stick) unsalted butter or margarine
- 1/2 cup milk
- 1 cup creamy peanut butter
- 3 cups quick oats
- 1/4 cup cocoa powder
- 1 tbs vanilla extract
- A pinch of salt
Instructions:
- Gather all your ingredients and measure them out. Line a baking sheet with wax or parchment paper. Having everything ready to go will make the process smoother.
- In a medium-sized saucepan, combine the granulated sugar, unsalted butter, cocoa powder, and milk. Cook over medium heat, stirring frequently until the mixture comes to a rolling boil. Once it reaches a boil, let it cook for 1 minute. This step is important for the texture of the cookies. If you do not boil long enough the cookies will be very thin.
- Remove the saucepan from heat and add the peanut butter, vanilla extract, and salt. Stir until the peanut butter is completely melted and mixed into the chocolatey mixture.
- Add the quick oats to the mixture and stir until everything is well combined. The oats should be fully coated with the chocolate mixture.
- Drop spoonfuls of the mixture onto your prepared baking sheet. You can use a cookie scoop or two spoons to help shape the cookies.
- Allow the cookies to cool and set at room temperature for about 30 minutes. They’ll firm up as they cool, making them easier to handle.
- Once the cookies have set, they’re ready to be enjoyed! Store any leftovers in an airtight container in the refrigerator for up to 3 days.
Tips and Variations:
- Add-ins: Mix in extras like chopped nuts, shredded coconut, or mini chocolate chips for added texture and flavor.
- Nut-Free Option: If you have a nut allergy or prefer not to use peanut butter, you can substitute with almond butter or sunflower seed butter.
- Lower Sugar: For a slightly healthier version, you can reduce the sugar amount or use a sugar substitute.
Happy Cooking!
